The holidays are around the corner, the weather should be cooling off and that means its time to dust off those crock pots or Instant Pots and get to cooking!

I, Social Queen Darlene welcome you to the KOST Cocina! I'm so excited to show you how to make one of my family's favorite dishes we call "Birria." It's a Mexican dish and usually uses different meats, such as goat, lamb or beef. I like to use a beef chuck roast and oxtail. In this recipe, I kept it simple and used 2-lbs of Boneless Chuck Roast. You will need:

  • Meat of your choice, approximately two pounds
  • One 28-oz medium can of Red Chile Sauce (I used Las Palmas medium/mild sauce)
  • One whole onion (1/2 goes into crock pot with meat and the other half I chopped up to serve with dish)
  • 1 cilantro chopped finely as a topping
  • 6-7 cloves of garlic
  • 2-tablespoons of Garlic salt
  • 3-4 Bay leaves
  • Limes
